4 large eggs
4 tbsp of single cream
Fine salt, ground pepper

Step 1 : Pre-heat the oven at 200°C. Spread the ratatouille out in 4 ramekins – oven proofed. Step 2 : Add 1 tbsp of cream in each ramekin with some pepper on top. Break an egg in each ramekin.
Step 3 : Place the ramekins in an oven dish able to contain them all. Pour boiling water at about half the height of the ramekins and put in the oven for 10 to 12 minutes depending on how you like your eggs.
Step 4 : Get the ramekins out of the oven, add some salt and pepper. Enjoy it by dipping small bread sticks in it.
